Great Side Dish on Blackstone – Bacon-Fried-Corn

Why consider a Side Dish

Today we make a great side dish inspired by our trip to Mexico City this month. This is a simple, quick, and easy side dish. It can be made in a pan on the stove but we love doing these things on the Blackstone!.

Prep time is about 5 minutes and it will cook for 5-10 minutes. 

Ingredients (Substitutes are listed)

  • 1 lb – Thick Cut bacon
  • 2 lbs – Frozen Corn (Feel free to use Fresh if you have it)
  • 2 Tbsp – Garlic (Ground)
  • 3 Tbsp – Tequila Lime Seasoning – https://amzn.to/3sBcW0N
  • 3 Tbsb ounces Mexican / Latin Crema (You can sub sour cream but not as good) –
  • Hot Sauce to taste

Directions for Preparing Awesome Corn SideDish

  1. Cook bacon on the Blackstone (I like it crunchy for this recipe)
  2. Remove Bacon from Heat and let cool, crumble on a plate/bowl
  3. Put Corn on Blackstone, spread out to heat up, Pile up, cover, and add water to steam a bit.
  4. Add in the Tequila lime seasoning to taste
  5. (Stir Corn frequently, add water to ensure it doesn’t dry out)
  6. I cook mine until the kernels are soft and moist inside, let the water dry up, and stir fry to get a bit of char on the outside of the corn
  7. Add Garlic and saute, then mix into Corn after 1 minute
  8. Add in Bacon Chunks
  9. Add in Crema and stir constantly just to heat up and mix the items
  10. Remove from heat and put in a serving bowl
  11. For an out-of-this-world topping, crumble crunchy Cheetos and add a sprinkle of Tequila lime Seasoning and a drizzle of hot sauce on each serving.

Directions for Serving Awesome Corn Side Dish

  1. Service in small clear dishes to see the wonderful crema run town the sides of the corn. It is a sight to behold
  2. For an out-of-this-world topping, crumble crunchy Cheetos and add a sprinkle of Tequila lime Seasoning and a drizzle of hot sauce on each serving.Pour Milk/Egg mixture over the pan of seasoned ground beef to cover the top.
  3. Add bay leaves to the top
